Recipe: Veal in Cream Sauce

One thing i have never mentioned on this blog is how much i love to cook. As of recent (for the past 4 months or so) i’ve been adding new recipes to my personal menu, and last night tried a new one that came out fantastic. It’s based off of an austrian recipe for “Rahmgeschnetzeltes”. It is basically Veal in cream sauce, which i served over fusilli noodles.

I’ll start posting more of my versions of recipes, i hope you enjoy them.

Ingredients:

1-1.5 lbs of veal (chopped for stew, easier to cut)
9 oz sour cream (small container)
1 small onion
5-6 mushrooms (can be varied)
3/4 cup beef broth (or clear soup)
2 teaspoons of flour
half a lemon
white pepper
salt
some olive oil (or regular cooking oil)
1 bag of fusilli noodles

Instructions:

Start by cutting the veal into thin strips or bite sized cubes. Veal is not the easiest meat to cut, so i went with bite size cubes / chunks. Cut up the onion, put it into the pan with some olive oil (a few splashes or 3 table spoons), on high heat, let the onion sizzle and then toss in the veal. You want the meat to cook rather quickly but then simmer to soak up the juices, which will make the veal very tender. Dice the mushrooms and add to the mix. Add the broth / soup and let it stew, almost boil.

When there is still liquid left but not too much (think stew-ish rahter than soupy), mix the flour with the sour cream and add it to the pan. The point is to bind it all together into a nice creamy sauce. Put the heat to a simmer and keep stirring. Then cut a lemon in half, and squeeze some dashes of juice into the sauce (i squeezed a half lemon completely and it was right on the border, so i recommend a little less than half) and season with salt and white pepper (to keep the nice color). Let it sit for a bit on no heat or very little heat (you don’t want the sauce to burn or lose it’s viscosity), while you make the fusilli. Serve in a noodle dish or bowl.

I recommend a dry white wine with this, such as a toscana. I don’t really drink white wine, but it really compliments the slight tanginess of the sauce.

As we reported last week, Doug Bowman, Google’s top designer, has confirmed that he’s leaving (we hear to Twitter). Bowman’s reasons for quitting are fascinating — and they show why Google’s losing its cool.

Bowman joined Google three years ago — too late, he now says. The company’s engineers-first culture was firmly in place, meaning every decision had to be proven through exhaustive testing, rather than a reliance on a clear vision of Google’s design. And in a backhanded slam at Google VP Marissa Mayer, the head of “user experience,” he notes that top management in charge of design had not background in the field:

When a company is filled with engineers, it turns to engineering to solve problems. Reduce each decision to a simple logic problem. Remove all subjectivity and just look at the data. Data in your favor? Ok, launch it. Data shows negative effects? Back to the drawing board. And that data eventually becomes a crutch for every decision, paralyzing the company and preventing it from making any daring design decisions.

Yes, it’s true that a team at Google couldn’t decide between two blues, so they’re testing 41 shades between each blue to see which one performs better. I had a recent debate over whether a border should be 3, 4 or 5 pixels wide, and was asked to prove my case. I can’t operate in an environment like that. I’ve grown tired of debating such miniscule design decisions. There are more exciting design problems in this world to tackle.

Exciting design problems, like those at Twitter? A source tells us that’s where he’s going, but Bowman hasn’t confirmed that yet. (He promises to disclose his new employer in a followup blog post.)

Bowman adds that he “can’t fault Google for this reliance on data,” but “won’t miss a design philosophy that lives or dies strictly by the sword of data.” It’s a microcosm of what’s going wrong at Google: The rigorous culture of making every decision quantitative, every process algorithmic, results in a coldly efficient experience, with no room for the human quirkiness that makes sites like Flickr so appealing. It’s hard to argue with Google’s financial results. But who wants to work inside the bowels of a perfectly tuned machine? If Google runs by the numbers, it hardly needs humans. And that’s why people like Bowman are leaving.

Bad Bike Shop in NYC ~ Do not go there!

Do not support Bicycle Habitat on Lafayette St. in Soho / NYC. This place is just the ultimate snobbery in bike wannabe cool people. The worst service!

I went in there twice. Once to buy a bicycle pump for my friends’ bday. No one even acknowledged by presence there, I walked around the store looking for the pumps, found them and then stood at the counter like a retard forever until someone bothered to come over to ring me up. God forbid, that you had to make a move. There were people fixing bikes, which is cool, I understand you just wanna fix some bikes and not be a salesperson. Then HIRE a sales person, with a friendly smile and who notices customers walking in. I briefly spoke to the fixing guy there who said he could cut my handlebars for ten bucks which I believe to be a good deal, so I figured I’d come back, have that done and then buy some tape for the handlebars, aka leave some dollars there. Easy. Right ? wrong!

I went back today and once again I stood around like an asshole forever waiting for the staff members to even bother glancing over and for the girl who ultimately helped me to finish her conversation about whatever with someone who was NOT a customer. She then came over and asked me if I was being helped to which I replied no and asked her if “you could cut these handlebars down to bullhorns” to which she replied “NO, but this guy might be able to” and pointed at one of the, let’s call them “mechanics” who was working on a bike. So first of all I didn’t ask her directly to cut my shit down, I just wanted YOU as a general YOU, like anyone in the shop. Anywho, so  the bike fixer dude said “not right now” and she chimed in “yeah he’s busy, that’s why there is a VERY long line”. What the fuck ? ok. So I asked “can I leave them here and pick them up later” and they both were super quick to answer “no” with a condescending smile as if I had asked if I could have a lollipop even though I was in time out. Once again the girl had to put in her two cents “yeah that is why everyone is waiting”. so I said “ok I’ll go to another shop” and heard her say, very sarcastically, “ok thank you sir, have a great day”. FUCK YOU.

So you cannot help customers, you can’t be bothered to take care of their needs, and you don’t want business because you just don’t want to pile it up to work on it later. They coulda told me “come back tomorrow” and I woulda gladly left my handlebars there. Now I know that you’re not making a fortune there, so lemme guess, you’re doing it cause you LOVE it. But if you love it so much why can’t you be helpful to a bike enthusiast. I believe it was because I rolled in there without my bike, wearing a button up shirt (from work) and just wasn’t part of the cool clique, aka with my bike constantly attached to my ass, not showering for days, wearing dirty bike messenger clothes and just in general exude ultimate coolness. FUCK you. I’ll just go spend my money someplace else, cut the handlebars myself even, I just don’t have all the tools but whatever, I’l l just get them. This is why I hate the fixed gear community here, such fucking bullshit. You got a great bike, wow! it’s like a pass to be a complete jackass.

Do not go to this shop, they make you feel like you just got raped and spit on, these people are too cool to give a shit, and just in general are obviously making so much fucking money as a sales clerk in a bike shop that they don’t need any more and cannot be bothered with customers. Fuck yer attitude, you’re just an asshole, whether or not you work in a bike shop or not. Be a person, be yourself, don’t act tough in front of your bike buddies with their wannabe coolness. And if you’re too hungover to be nice or don’t feel like dealing with people, then don’t come in or work someplace where you’re not face to face with customers. What a shithole of a shop. No thank you.

As you finish a sorry alien excuse for coffee you quickly glance across the dirty glass and steel counter of the diner, searching for your next ride. The journey through dub is not over yet.

Whose ship will you be able to hitch a ride on next ? What species will the pilot be ? Will he, she or it fly fast or slow ? Take shortcuts through a dangerous meteor shower or just use nearby moons for gravitational slingshots to conserve the precious fuel ?
Either way, the mission is to continue exploring this unique galaxy, find and collect new sounds, discover new beats and ride the aural wave of fresh dub in all its forms.

Calling out…

In general i’m not one to really create bad blood or try to judge anyone. I do like to talk shit but on a light hearted basis, keeping things funny and never with malicious intent. So in light of this admission, i’d like to point out something interesting. Touch Clothing promoted a party on September 24th 2005 together with a NY promoter who goes by Mastro. The party was called MANDATORY. Tonight, September 12th 2008, he is hosting an event with the exact same name. This does not really bother me, i just think it is funny that the same promoter recycles a party name like that. I guess it’s done all the time, there is some merit to that statement as well, it’s just funny.

Hmmm, speaking of which. I actually know the owner of that company pretty well, as well as people who work there, have worked there and help them out on the regular. All very nice people. Yet another interesting fact struck me this week. 

The new Methods Fall line is out and the Women’s Tees just so happen to have a T-Shirt called “Untouchable”. Now the design is completely different, it’s just curious that the shirt has the same name as a shirt we released 2.5 years ago with Touch Clothing.

Now it’s easy to call me a hater, and sure, if you’re inclined to do so, just do it. I don’t care. Because in the end, i’m actually doing them a favor by promoting their products and events.
